Simple Shrimp Briyani - Yet uncertainly appetizing...



Ingredients:


2 cups rice - soaked and Drained
Water - 2:1 ratio ( 2 cups of water for 1 cup of rice)
350 gms shrimp 
2 onions - sliced
2 small tomatoes - chopped
50 gms ginger & garlic paste ground with few fresh mint leaves
Coriander leaves - small bunch
Green Chilli - 3 (depends upon how much spicy you prefer)
Lemon juice - few drops
Cinnamon - 3 nos
Cardamom - 3 nos
Cloves - 4 nos
(If you have other regular masala species like bay leaf, star anise etc add to increase the flavour)
Butter - 1 spoon
Oil - 2 table spoon
Garam masala powder - 1/2 table spoon
Chilli powder - Depends on level of spicy you prefer.
Turmeric powder - 1/4 spoon.
Salt - desired amount

Preparation:

Heat the utensil, add butter wait until it turns into ghee stage. You could smell the aroma of ghee when it’s ready. Add oil once it hot enough add the spices, let it splitter then add the onions, sauté for few minutes, I always add salt at this stage, (the reason is it helps cook the onions and the rest of ingredients fast because in preparing yummy briyani the tricky part is sautéing onion, ginger & garlic paste with tomato. If this comes out at the exact consistency, we could guarantee for the taste.) Then add ginger & garlic paste ground with mint leaves, coriander leaves & green chillies. Sauté until it gives us an aroma of completely cooked ginger & garlic paste. When oil oozes out from the mix tells us it’s ready to add tomato. Next add tomatoes, same sauté until oil oozes out.
Then add the powders and mix well. Sauté for few minutes. Add rice & water with exact measurement & it’s a must have condition. Add lemon juice and shrimp. Don't forget to check for the salt. Mix well and keep it in oven for half an hour. Yummy Shrimp briyani is ready.
